Freezing Broccoli

Step one:  prepare the broccoli by cutting into desired size pieces and wash dirt and bugs.  This is just one of four bowls of broccoli for this day of harvest.

Step two:  Steam blanch the broccoli for a few minutes.  I keep it covered except to take the photo.  Look at the pretty green color!

Step three: quick chill the blanched broccoli in ice water.  You want to stop the cooking action fast so that the broccoli will maintain better texture and nutritive value.

Step four: drain the water off the broccoli.  No need to have the excess water in the freezer bags!

Step five:  Pack the broccoli into freezer bags, lable and these are ready to be placed in the chest freezer.
